MAKE AHEAD SAUSAGE HASHBROWN

  1. Preheat Oven: Set your oven to 350 degrees to ensure it’s ready for baking.
  2. Sauté Sausage: In a skillet over medium-high heat, sauté 2 lbs. of ground breakfast sausage until it’s completely browned. Once done, set it aside.
  3. Cook Hashbrowns: In the same skillet, heat 2 lbs. of frozen hashbrown potatoes until they are lightly browned and mostly defrosted. This usually takes around 8-10 minutes.
  4. Prepare Casserole Dish: Grease a 9×13 casserole dish to prevent sticking. Layer the browned hashbrowns at the bottom.
  5. Add Sausage: Place the sautéed sausage on top of the hashbrowns, creating a hearty base for your casserole.
  6. Sprinkle Cheese and Chilis: Sprinkle 2 cups of shredded cheddar cheese over the meat. Add the drained diced green chilis on top for an extra kick of flavor.
  7. Mix Egg Mixture: In a large mixing bowl, combine 9 large eggs, 2 cups of milk, 1 tsp. of garlic powder, ½ tsp. of onion powder, and salt and pepper to taste. Whisk the mixture well.

  9. Bake Uncovered: Place the casserole in the preheated oven and bake uncovered for 35-40 minutes or until the eggs are completely set.
